I'd have done exactly what you did, but the wording should be different.
"We pay our serving staff an hourly wage at or above minimum wage. Menu prices reflect these operating costs. Our serving and kitchen staffs encourage gratuities to support their hard work."
In this way, customers at least know they're not making 3 bucks an hour.
