Here's a few ideas for fantasy books and series

Memory, Sorrow, and Thorn series by Tad Williams. Book #1 is The Dragonbone Chair. Typical coming of age fantasy tale (which are a dime a dozen in the fantasy genre) but really well written with interesting cultures. A lot of characters but the story focuses on one main character.

The Kingkiller Chronicles by Patrick Rothfuss. First book is The Name of the Wind. Excellent story.

The Black God's Drums by P. Djeli Clark. Just read this a few weeks ago. 108 page novella that can be read in a couple of hours. Very unique plot and GREAT writing.

The Illuminae Files by Arnie Kaufman and Jay Kristoff. Book #1 is Illuminae. Young adult sci-fi story that takes place in outer space. The story is told in the form of emails, files, etc. I normally don't like YA books but this was fun.

Old Man's War by John Scalzi. Fun sci-fi series.

Station Eleven by Emily St John Mandel. Unique dystopian story.

The Broken Empire series by Mark Lawrence. First book is Prince of Thorns.

The Chronicles of the Black Company series by Glen Cook. First book is The Black Company. Dark fantasy with a military flavor. I stopped after the first three books.

Gentleman Bastard series by Scott Lynch. First book is The Lies of Lock Lamora.
