Carabas low grade pasta - Angie's wonderful pasta

Went there last night. Long long time since I've been there. The pasta was easily the worst I've had in any restaurant. It was obviously cheap stuff - think low end American Beauty. It was way overlooked. Limp and mushy in the mouth. So they tried again - came back a crunchy al dente. Did not even try to finish it,

The problem was not the cook. The problem was a low cost pasta which is almost impossible to cook to the right texture. Great pasta is an art. But most of the art is in the making of the pasta - not the cooking of it.

Should have gone to Angie's in Castle Rock. The pricing is in the same range. But the pasta is real - I want to believe home made. And the restaurant - it's been there for years and years - and you just feel like your at moms house thirty years ago. You belong there - are connected there. If you want a place in Castle Rock for Italian, you've got to try Angie's.

Blue Parrot in Louisville was such a great place.

Where else for great Italian on the Colorado Front range?
